Cold Smoked Trout - Large Side
A unique side of large cold smoked ChalkStream® trout (min 650g). Hand filleted, pin boned and trimmed, before being dry cured in salt and demerara sugar and traditionally kiln smoked for 8-10 hours over sustainably sourced oak chippings. The smoked fillets are matured for several days in a Himalayan salt chamber to produce an exceptional texture and depth of flavour. Available in traditional long slice, vertical cut or unsliced. A minimum 7 days shelf life and is suitable for home freezing.
Long slice - traditional horizontal cut along the length of the fillet producing large, versatile slices.
Vertical cut - a small and marginally thicker top down slice with the full flavour profile of the smoke. Perfect for canapés.
